It honestly does depend on personal taste.
For example, I am very sensitive to salt. I tend to not add any salt at all to dishes. If I made that, I would add none, since it also contains olives, which are rather salty.
I do like pepper, however, so I would likely add a tablespoon of that.
The absolute best way to do it, though, is to add a half teaspoon at a time of one or the other, mix it, and taste it. That way you get the flavor that YOU want.
the Chorizo will give you enough salt, I noticed that the recipe doesn’t specifically say how much salt and pepper to add ,for the simple reason that we all have a different taste and palate so if I don’t say add 1 tsp it is because you must taste it and adjust it to your liking and not mine . Make the recipe as is and at the end taste it and add salt and pepper to it if it needs it .it’s better not enough then too much .
Probably a little given all the extra flavors.
this recipe is pretty salty already! I would only use a pinch of salt on the chorizo and a pinc on the chicken. since I am a pepper fan, I would tend to go a little heavy. maybe two pinches. I do not use shakers. I use my thumb and forefinger and sprinkle it on . keep your hand high went you do that and you will get an even amount over your intended target in the pan.
I wouldn’t put any in. The chorizo, hot sauce, cheese, vegetable juice and most especially the Spanish-pimento stuffed olives all have salt in them ( they are brined in salt). Salt enhances flavours and is why most recipes call for it but these are all big bold flavours with plenty of salty ingredients already. No pepper either, you already have 1/4 cup of hot sauce.
You already have alot of flavors going on with that recipe, if I had to say exactly how much salt to put in it, I would start off with 1/2 T first, taste it then add a little more if needed.
it’s a matter of personal taste, but i myself hate salt and would only use a pinch

The reason the recipe doesn’t tell you how much to put in is because salt and pepper are personal tastes and should be added to suit your personal taste.
I can’t tell you how much I would use, since I would need to taste the end result before deciding if, and how much, salt and pepper I would like.
